Vegan Chocolate Mousse with Strawberries
Highly recommended for all vegans!
400 g silken tofu
250 g Manner couverture chocolate
3 tbs confectioners’ sugar
5 tbs espresso (cold)
1 tbs rum (or coffee liqueur)
200 g strawberries
1 tbs confectioners’ sugar
20 mint leaves
To make your vegan chocolate mousse with strawberries, start by chopping the couverture chocolate into small pieces. Melt them in a bowl over a pan filled with water.
While they are melting, use a food processor to finely blend the tofu. Add the chocolate, confectioners’ sugar, espresso, and rum and stir until the ingredients form a fine mixture. Put the chocolate mousse in a small glass or a bowl and leave to chill.
Destalk the strawberries and chop them into small pieces. Mix with the confectioners’ sugar and mint leaves.
Shortly before serving, arrange the strawberries on the mousse.
You can also use different fruit, such as blueberries or raspberries, for this vegan chocolate mousse.
