Sweet Apple Soup with Manner Wafer Dumplings
A soup with a difference!
For the soup
400 ml white wine
150 g sugar
3 tbs lemon juice
Mint (for decoration)
For the dumplings
2 packs of Manner wafers
2 tbs nougat
6 Manner ladyfingers
To make your sweet apple soup with Manner wafer dumplings, bring the wine, sugar and lemon juice to the boil. Peel and core the apples and chop them into small pieces. Add them to the wine and leave to simmer for about 10 minutes, stirring the mixture from time to time. Then puree the mixture with a hand blender and leave to chill.
To make the dumplings, grind the ladyfingers into fine crumbs.
Mix the Manner wafers and the nougat in a food processor until they form a fine mixture. Shape the mixture into 4–8 small dumplings, roll them in the crumbs, and freeze for about 40 minutes.
Pour the soup into precooled dishes, add the dumplings, and garnish with fresh mint.
You can now serve your sweet apple soup with Manner wafer dumplings.
Try replacing one of the apples in this soup with a pear.
