Rice Pudding with Mandarin Salad and Chocolate Foam
Rice pudding 2.0!
For the rice pudding
1 l milk
300 g round grain rice
4 tbs sugar
1 pack of Manner wafers
For the foam
50 g Manner couverture chocolate
200 g milk
1 tbs sugar
For the salad
1 tbs honey
15 mint leaves
To make your rice pudding with mandarins and chocolate foam, briefly bring the milk and sugar to the boil. Then carefully add the rice and simmer on a low heat until the rice is soft, stirring constantly.
Chop the Manner wafers into fine pieces and stir into the rice pudding just before serving.
While the rice is cooking, prepare the salad. Peel the mandarins and pull them into small pieces. Add lime juice and honey to taste and stir in the mint leaves.
To make the foam, heat the couverture chocolate and milk to 60°C. Mix with a hand blender or milk foamer to produce a solid foam.
Pour the rice pudding into a glass, add the mandarin salad, and garnish with the chocolate foam. You can now serve your rice pudding with mandarins and chocolate foam.
