Quick Tiramisu with Ladyfingers and Berries

When the clock is ticking ...

500 g mascarpone
50 ml whipped cream
4 tbs confectioners’ sugar
Vanilla pod (pulp)
100 ml espresso
2 tbs sugar
2 tbs coffee liqueur

24 ladyfingers (6 per dish)
200 g berries (mixed; e.g. strawberries, blueberries, blackberries)
1 tbs confectioners’ sugar
2 tbs cocoa powder

  1. To make your quick tiramisu, mix the mascarpone in well with the whipped cream, confectioners’ sugar, and the pulp from a vanilla pod.

  2. Warm up the espresso and sugar, but don’t let the espresso boil (this gives it a bitter taste). Leave to simmer for about 20 minutes, then add the liqueur and leave to cool.

  3. Mix the berries with the confectioners’ sugar.

  4. Spread a little mascarpone on a plate, lay 3 ladyfingers on top, and then spread on some more mascarpone. Add a layer of 3 ladyfingers. Then spread the rest of the mascarpone on the ladyfingers and add the berries.

  5. Garnish your quick tiramisu with the coffee syrup and enjoy!
