Quick Tiramisu with Ladyfingers and Berries
When the clock is ticking ...
500 g mascarpone
50 ml whipped cream
4 tbs confectioners’ sugar
Vanilla pod (pulp)
100 ml espresso
2 tbs sugar
2 tbs coffee liqueur
24 ladyfingers (6 per dish)
200 g berries (mixed; e.g. strawberries, blueberries, blackberries)
1 tbs confectioners’ sugar
2 tbs cocoa powder
To make your quick tiramisu, mix the mascarpone in well with the whipped cream, confectioners’ sugar, and the pulp from a vanilla pod.
Warm up the espresso and sugar, but don’t let the espresso boil (this gives it a bitter taste). Leave to simmer for about 20 minutes, then add the liqueur and leave to cool.
Mix the berries with the confectioners’ sugar.
Spread a little mascarpone on a plate, lay 3 ladyfingers on top, and then spread on some more mascarpone. Add a layer of 3 ladyfingers. Then spread the rest of the mascarpone on the ladyfingers and add the berries.
Garnish your quick tiramisu with the coffee syrup and enjoy!
You can use different types of fruit in your quick tiramisu.
