Chocolate and Peanut Butter Muffins
A sweet and salty snack!
1 tsp sea salt flakes
2 tbs cocoa powder
200 g Manner couverture chocolate
150 g yogurt
250 g flour
130 g sugar
150 g butter (soft)
1 tsp baking soda
1 tbs peanuts (chopped; for decoration)
12 paper muffin cases
For the frosting
100 g peanut butter (without pieces)
2 tbs confectioners’ sugar
200 g butter (soft)
To make your chocolate and peanut butter muffins, start by spreading out the paper cases on the muffin tray.
Chop the couverture chocolate into chunks and melt them in a bowl.
Beat the eggs with the sugar, salt, and butter until fluffy. Mix the baking soda with the flour and cocoa powder, and mix into the eggs with the yogurt. Finally, add the melted couverture chocolate.
Pour the muffin mixture into the cases and bake in an oven preheated to 170°C for about 20–25 minutes. Remove them from the oven and leave to cool.
Now you can prepare the frosting. Beat the butter until fluffy and stir in the rest of the ingredients. Pack the mixture into an icing bag and use it to frost the muffins.
Decorate the chocolate and peanut butter muffins with chopped peanuts.
The ingredients listed will make 12 chocolate and peanut butter muffins.
