Pumpkin Whole Grain Wafer Ring Cake
A sweet ring cake made with pumpkin, pumpkin seed oil, and whole grain Manner wafers – now that’s a mouthful!
2 packs of Manner Whole Grain Wafers
10 tbs pumpkin seed oil
200 g pumpkin (Hokkaido)
400 g whole grain flour
150 g brown sugar
250 g butter
Fat (and flour for the mold)
To make your pumpkin and whole grain wafer ring cake, peel and core the pumpkin and chop it into small cubes. Cook in slightly sugared water until soft, drain well, and finely puree.
Separate the eggs and beat the yolks with the sugar and butter until fluffy. Beat the egg whites until not quite stiff. Then slowly pour and stir in the oil. Stir the flour, pumpkin puree, and finely chopped Manner wafers into the mixture and fold in the egg whites.
Grease a ring cake mold with butter and sprinkle on some flour. Pour in the ring cake mixture and bake in an oven preheated to 170°C for about 45 minutes.
Then turn the cake out of the mold and sprinkle the pumpkin and whole grain wafer ring cake with confectioners’ sugar.
